Besides, it's likely that you're paying more for grated cheese compared to the whole wedge, and that the pre-packaged shredded cheese includes additives to keep it from clumping together and becoming moldy.
A little extra effort can save you money and additives in your food.
If you use a lot of cheese and prefer to grate your own, you should consider getting a good box grater for basic cheese shredding1 cup of shredded cheese will take under two minutes. If you use the food processor, you'll have grated cheese in 10 seconds. In addition, a Microplane makes quick work of fine grated Parmesan cheese.

Dressing Homemade Cheddar For Aging
At this point, its time to decide how to dress the homemade cheddar cheese for aging. There are three common methods used these days, clothbound, waxed, or vacuum packed.
Im opting for a traditional clothbound cheddar, where strips of cheesecloth are slathered with lard to form a barrier around the outside of the cheese. We render our own lard, so I have plenty on hand, but you can also use coconut oil or butter.
The cheesecloth helps the lard stick and forms a barrier that helps retain moisture, but still allows the cheese to breathe so that it can develop a natural rind and complex flavors.

Making a waxed cheddar is also an option, and the cheese is dipped in melted wax to create a barrier around the outside. Since its fully surrounding the cheese in a waterproof layer, moisture isnt lost during aging and its easier to age if youre not able to maintain consistent humidity in the aging space.
The wax also prevents a natural rind from developing, which means you dont lose the outer layer of the cheese.
The cheese wont develop the complex flavors of a clothbound cheddar, but really intense crumbly aged clothbound cheddar isnt everyones cup of tea anyway. If you like high quality aged waxed cheddar, then this is a good option.
The process for waxing cheese is outlined here. Personally, Id suggest the dipping method, as its much cleaner. Brushing the wax is slow and incredibly messy.

The wholesale market for Cheddar is typically a mild one. But the vagaries of supply and demand during the pandemic have caused sharp swings in cheese prices, which rose to record highs this month just weeks after plummeting to nearly 20-year lows.
Consumers are buying way more cheese, even as the usually huge demand from restaurants and schools has fallen off. Dairy farmers and prepared-food companies, which supply ingredients to cheese makers or buy their products, have seen disruptions in their businesses. Together, these countervailing forces have fueled the up-and-down trading in the market.
Like the price of oil, silver and hogs, cheese prices are set, in part, by traders in commodities markets. Each trading day at 11 a.m. Chicago time, the Chicago Mercantile Exchange operates a 10-minute session in which buyers and sellers typically large dairy food cooperatives, cheese producers or other companies active in the industry electronically trade roughly 40,000-pound truckloads of young, mild Cheddar.
Cheese prices soared to a record high on June 8, when a 40-pound block of Cheddar the benchmark for cheese, akin to a barrel of West Texas Intermediate in oil markets touched $2.585 a pound on the CME. By Tuesday, the price of block Cheddar jumped even higher, to $2.81 a pound.

Timetable For Making Cheddar Cheese
I know, that was a lot. Im going to briefly recap the process in bullet form, which will likely be easier to follow as youre actually making the cheese. Since timing is important, Ive set the bullet points to times starting at noon. This is a time-intensive process, so you might want to start a bit earlier in the day
That said, most of the time is waiting, so its easy enough for me to incorporate this into a rainy day afternoon of indoor play with my two preschoolers .
On day one, the activity takes about 6 1/2 to 7 hours, on and off. Then pressing and drying takes about a week. Finally, the cheese is aged for months.
At this point, a full week later, the cheese is ready for dressing and aging for at least 3 months .

The Birth Of Low Moisture Mozzarella
In the 1930s, Midwestern dairy producers saw an opportunity. Mozzarella had already become a popular product but took days to produce and lacked the shelf life necessary for long distance shipping. The first step toward solving the problem was achieved by increasing the temperature at which the milk was curdled, effectively drying the final product. The Stella Cheese Company of Campbellsport, Wisconsin, then developed a bacterial ratio that decreased the curdling process from three days to just one, which translated to major cost reduction. Compared with East Coast mozzarella, this new variation was firmer, higher in fat concentration and slightly yellow in appearance. Cheese companies labeled the new product Pizza Cheese, due to its greatest source of demand, until the FDA codified it as low moisture mozzarella under its 1965 Standards of Identity. Defined as a cheese with no less than 45-percent milk fat and between 45- and 52-percent moisture, this is the mozzarella that accompanied pizza on its rise to popularity in America.
While fresh mozzarella must be torn or cut, low moisture mozzarella is firm enough to be shredded, diced or sliced. Each preparation lends itself to specific uses in the pizzeria.

The Cost Of Transformation
How much it costs to turn milk into cheese depends on your efficiency of scale. The standard cheesemaking vat at a Wisconsin cheese plant holds 40,000 pounds of milk. Uplands vat holds 9,000 pounds, and most handmade cheeses I know are produced in vats less than half that size. Smaller batches mean more time and higher labor costs to process the same amount of cheesea less efficient operation. Larger cheesemaking operations also benefit from precise but costly production machines that smaller makers cant afford.
So the cost of turning Uplands milk, which costs twice that of commodity prices already, is multiplied further by a less efficient production process. Thats difficult enough, but theres an even greater cost to come: aging.

At this point you will have the final curd ready for pressing BUT another unique aspect of the Cheddar is that the dryness and acid have both reached close to their desired level and should not be allowed to continue. If relying on brining or dry salting the surface of the cheese, the acid would continue to increase causing a very wet and acid cheese.
If at this point the curd is too wet, the residual lactose may still be enough to trigger a late fermentation and result in leaking cheese and a very acid and chalky final cheese.
If the curd is too dry, it will be difficult to consolidate and will take much longer to age.
The curd mass is broken into small pieces about thumb to walnut size, and salt is then added at the rate of 2% of cheese salt to the weight of the fresh curds.
If the curd weighs 3lbs , 2% would be .96oz of salt.
About 0.5% will wash away as the salt pulls moisture from the curd, leaving about 1.5% in the finished cheese. To best keep the salt from hardening the curd surface, and thus limiting moisture expulsion, add salt in 3 stages over 15-20 minutes to allow each addition to pull whey and form its own brine.
